It embodies the very first reproduction of an absinthe dating from the start of the Green Fairy and is derived from an unpublished hand-written recipe. At that time, absinthe was not yet a popular aperitif, but still a mysterious, magical elixir.

The Roquette 1797 owes its pretty, natural colour to the infusion of three plants ordinarily used during the colouring stage.
Although classical plants are found in its composition, such as green anise, fennel and grand wormwood, other more uncommon plants are also part of it (secret...)

As it could be compared with a historical document, Roquette 1797 absinthe as most unique !

------VERY LIMITED QUANTITIES------

- The recipe drawn from the manuscript of 1797 was formulated in « pots of eau-de-vie », « ceilles » and « handfulls »; the Roquette 1797 is therefore an interpretation.

- If it is obvious what the number « 1797 » means, we cannot say as much about the name « Roquette ». In fact, it was the name of the horse that used to be ridden by the legendary father of absinthe, the Dr Ordinaire.

- The Roquette 1797 absinthe is an Archive Spirits production, which is a joint venture between two fascinated absintheurs: David Nathan-Maister of Oxygenee and Peter Schaf. They are planning on producing further releases of the Roquette 1797 absinthe: a « 1731 » and a « 1804 » version, both also based on unpublished hand-written originals.
“Les fils d’Emile Pernot” distillery was founded in 1890 in Pontarlier, France, by Emile Pernot. In 1910, the distillery produced approximately 450 hectolitres; that is not surprising, because in those days, the consumption of absinthe was making good progress.

When “Fee Verte” was banned in 1915, the distillery turned its production to other products such as those made from aniseed, fruit brandies or alcohol made from gentian.

In 2001 the small distillery started to reproduce absinthe with “Un Emile” from an old family recipe.

In 2005, the distillery was sold to François Thevenin, who has since developed the firm to add a touch of modernity.

A year later, at the end of 2006, François Thevenin bought the Klainguer distillery, also situated in Pontarlier, and formed the Pernot – Klainguer distillery.
- At first, savour Roquette 1797 with half a piece of sugar. Then add more or less according to your taste.

- For one measure of absinthe (3cl), add 2 to 5 measure of fresh water.

Interesting. I just had my first drink, and it has a different herbal flavor, than most of the others i've tried. I am impressed with this brand, and believe it is certainly worth trying. I think I'll try another drink...

The best I can think of how to describe it is: A steel hand in a velvet glove.
But don't forget that the steel hand needs a very slow ritual... diluted with twice or three times as much water (at the most) !
You have to drink it thick, because if you put four times as much water it looses its power. (that's right, don't forget it's an antique that came out way before our old friend Henri-Louis Pernod)
Anyway, after having respected the ritual, you get a surprising result and a beautiful grand wormwood on the forehand, all along the tasting. Great !
